Michelin & Cie, Europe’s largest tiremaker, produced its first guide in 1900. It was free of charge until 1920 and was intended for chauffeurs.
The three star rating was published in 1936.
one star: “A very good restaurant in its category” (“Une très bonne table dans sa catégorie”)
two stars: “Excellent cooking, worth a detour” (“Table excellente, mérite un détour”)
three stars: “Exceptional cuisine, worth a special journey” (“Une des meilleures tables, vaut le voyage”).

It’s not just about stars!, Since 1955, the guide has also highlighted restaurants offering “good food at moderate prices”, a feature called “Bib Gourmand”. They must offer menu items priced below a maximum determined by local economic standards.
Additions to Glasgow today include The Gannet and Ox and Finch.
All listed restaurants receive a “fork and spoon” designation, as a subjective reflection of the overall comfort and quality of the restaurant. Rankings range from one to five: One fork and spoon represents a “comfortable restaurant” and five signifies a “luxurious restaurant”. Forks and spoons coloured red designate a restaurant that is considered “pleasant” as well.
Restaurants can also receive other symbols next to their listing.
Coins indicate restaurants that serve a menu for a certain price or less.
Interesting view or Magnificent view, designated by a black or red symbol.
Grapes, a sake set, or a cocktail glass indicate restaurants that offer a “somewhat interesting” selection of wines, sake, or cocktails.
