Mexican Quinoa Bowl

I’m sure you know that quinoa is a super food. However, did you know that 1 cup of cooked quinoa contains 8 grams of protein, 5 grams of fiber, and almost 3 mg. of iron??? I don’t know about you but I am always looking for fast easy ways to add these three nutrients to my family’s diet. This recipe is adapted from TDM’s Mexican Quinoa Bowl Recipe. Enjoy!

Mexican Quinoa Bowl

{serves 2}

Ingredients

2 Cups Cooked Quinoa

1 Cup Cooked Black Beans or Kidney Beans

1 Large or 2 Small Tomatoes chopped

1 Cup Chopped Kale

3 Tablespoons of Avocado Oil {can sub olive oil}

Juice from One Lime

1 Ripe Avocado divided in two

Green Onions for Garnish

Salsa

Hop to it.

Combine quinoa, black beans, kale, oil, and lime juice in medium bowl. Stir in chopped tomatoes. Divide contents of bowl into two serving dishes. Top with sliced avocado, chopped green onions. Add Salsa to taste.

{Option to double recipe and then add last three ingredients when ready to serve}. 

Viola! Easy Healthy Family dinner! {or lunch… heck I could eat this all day!}
