A few weeks ago I bought two Galia melons, for the price of one. At the time, it seemed like a good idea, but soon I realized that I did not fancy melon… So what could I do with them?
In my freezer, and for the sole purpose of making ice cream, there is a permanent provision of frozen berries… raspberries, blueberries, blackberries and strawberries….
So, I thought… I KNOW! I shall make melon and berries jam!
I used:
2 small round melons (very ripe)
1 bag of half a kilo of frozen mixed berries.. and some little ones from my garden plant.
150 gr of brown muscovado sugar
Tip:
When you are making jam you need a good few hours, but also, you need to remember that the mix gets hot rather quickly. Therefore, unless you are careful, the bubbles (especially when cooking berries) will make your kitchen look like a slaughter house.
I cut the melon in small pieces and cooked with the berries.
I added the sugar and when the fruits began to disintegrate, I reduced the heat…
Once it cooked for close to 4 hours, I was left with two jars worth of jam.
The jam was very delicious and the texture of the melon was a surprise.
