Meatloaf by Betsi Suzor3 pounds of grass-fed beef, a whole onion and lots of fresh pressed garlic.

Fresh herbs from my garden like parsley, oregano, basil.

A tablespoon or two of olive oil, one egg (not necessary), a few tablespoons of almond flour, a few tablespoons of ketchup and some salt and pepper.

Mix it together with your hands.

Mold it to the bowl then with your hands into a football on your pan covering with ketchup. 1.5 hrs on 350. If the oozing juices aren't starting to thicken, add time.

Use meat thermometer 160° minimum. Let it ooze for a few minutes out of the oven before cutting.
