Here we are, another Sunday, another Meals of the Week post!  Every Sunday I do a round up and share with you, my readers, a delicious round up of all of the fabulous main meals that I have enjoyed over the past seven days! That's a whole lot of tasty.

I live on my own and don't ever want my meals to be boring or uninspired. I also don't want to be a person who only eats ready meals, or things that come from cans or frozen dinners. They are loaded with salt, sugar and fat.  As much as possible and for as long as possible I want to cook for myself. I also want to keep what I eat as healthy and nutritious as possible.  Sharing that with you on here helps me to stay on track. 

This is something I look forward to doing every week and the feedback from my readers is also very positive.  There re a lot of us in the same situation, living on our own, or in an empty nest, having to downsize our meals.  If I can help to inspire someone to cook delicious meals for themself then I feel really good about that!

I try to keep everything healthy and nutritious and within a decent budget.  With the cost of food these days I cannot afford to waste anything, and I know you can't either.  I have perfected the art of cooking the smaller meal, and I am sharing that with you.

I do eat out once a week with my father and his friend Hazel. In that instance I have supplied a "like" recipe to substitute in place of the meal I have enjoyed out.  (In all honesty, the meals I make myself are a lot tastier than anything I have enjoyed out.  There is a dearth of really good restaurants in my area.  Its appalling.)

I usually have my main meal at noon.  For breakfast I am enjoying protein shakes and for supper (later in the day) I will have cereal or toast, sometimes a sandwich, depending on what I have had earlier in the day. I often have a salad.  I love salads.

In any case here you go.  My Main Meals of the Week for the past seven days. I really hope that you enjoy them as much as I did!

Oven Fried Chicken

SUNDAY June 16th - Father's Day

We did our traditional thing for Father's Day and picked up some Fried Chicken for our men to enjoy.  This year we did not go to KFC however, we went to Mary Browns, just to break from Tradition, and it was excellent. Mary Brown's is 100% Canadian owned and we like the chicken better. 

We treated ourselves to a medium bucket with potato wedges and gravy.  Then we had a large tossed salad to enjoy along side.  Okay, we got a bit cheeky and picked up some onion rings from KFC, but that was it.   For dessert we enjoyed my Small Lemon Cake.

In place of the fried chicken I am sharing my recipe for Oven Fried Chicken.  This delicious version is always tender and juicy. Its coated with crushed potato chips for an extra crisp and tasty coating!

Crustless Veggie Quiche

MONDAY, June 17th - Crustless Veggie Quiche

In light of the sins of the night before, I elected to go veggie and have a Meatless Monday with a delicious Crustless Veggie Quiche.  This makes a great supper dish and without the extra calories of a pastry crust, it is not all that unhealthy. (We won't talk about the cheese, lol) 

This makes a quick and easy supper for two. Crispy tender vegetables are popped into the bottom of a buttered dish, and topped with some onion and grated cheddar. A rich egg custard is poured over top and then the casserole is simply baked until nicely puffed and golden brown. Delicious served with some oven chips, or a salad. (I had a salad on this occasion.) You can even use half fat cheese if you want to.

Roast Chicken with Sour Cherries, Green Olives, Fennel & Thyme


TUESDAY, June 18th - Roast Chicken with Sour Cherries, Green Olives, Fennel & Thyme

I had a  whole chicken which needed using. I cut it in half and then cut one half into quarters, freezing them. The other half I roasted whole.  I made a delicious stuffing of dried sour cherries, buttery green Castelvetrano's olives, fennel seed, lemon and thyme and pushed it between the skin of the chicken and the flesh.  I laid it out onto a bed of thickly sliced lemons, brushed it with some oil, sprinkled it with some coarse salt and then roasted it to perfection.

This was tender and juicy with some really magical flavors going on.  The skin was lovely and crisp and the pan juices were amazing. I enjoyed this with some roasted sweet potato, and vegetables. I had enough for a really generous meal on the day and leftovers to enjoy another day.

Baked Cod with A Crumb Topping

WEDNESDAY, June 19th - Supper out with Dad

On Wednesday nights I usually go out to supper with my father and his friend Hazel. Cindy (my sister) did not join us this week.  Dad had the special which was Haddie Bits and chips.  Hazel and I each had the pan fried Haddock. It comes with potatoes and vegetables. I had mashed potatoes.  Wednesday was the hottest day of the year so far.

We usually go to The Big Scoop, which is local. I don't know how they were coping in the heat having to cook in that kitchen at the restaurant.  It was stinking hot.

I am sharing, in the place of what I had at the restaurant, my recipe for Baked Haddock with Buttery Cracker Crumb Topping.  Perfectly cooked fish with a fabulously tasty and crisp buttery crumb topping. This always goes down a real treat!  Its quick and easy to make and oh so delicious!

THURSDAY, June 20th - Cold meats with salads

Another stinker of a day.  Believe it or not it was even hotter than it had been on Wednesday, so hot that the restaurant we had eaten at the day before shut down as it was too hot in the kitchen. Talk about heat wave!

I had some cold leftover chicken for my supper along with some of my Classic Potato Salad. This is a small batch recipe for the smaller family. In all truth I could eat the whole batch myself. It is just so tasty.   I also had some coleslaw with it and some lettuce and tomato.  This is a vinaigrette coleslaw and lasts for quite a while in the refrigerator.

Turkey Spinach Burgers

FRIDAY, June 21st - Turkey Spinach Burgers

Still a very hot day today, but not quite as humid. I had a sausage making day with my sister. We made two kinds.  Apple and Sweet Italian.  They have to cure of course.  I wasn't feeling like having anything too complicated for my supper and so I made myself a Turkey Spinach Burger.  This is a burger that is just as delicious on its own or in a bun.  Moist and filled with loads of flavor and delicious textures.

I enjoyed it with some salad, and some potato salad leftover from the day before.  It was just enough. We had been tasting the sausage meat earlier to make sure we had the seasonings correct.  Its a tough job but somebody had to do it! 😁

Four Can Chili

SATURDAY, June 22nd - Four Can Chili

Four Can Chili. I enjoyed a nice bowl of this along with some crackers.  I had some frozen in my freezer in single sized portions. No fuss no muss.  Four Can Chili is a delicious slow cooker meal that is very simple to make.  Its also a great hot weather meal to put together because it won't heat up the kitchen.

A simple store cupboard meal, four simple cans of ingredients are put together in the slow cooker in the most delicious way. Tomatoes, beans, chili (without beans) and two cans of beans, pinto and kidney.  With some seasonings and a few other bits, you end up with a delicious chili that belies the fact of how very easy it is to put together.  

It makes four servings, and freezes very well.  Whenever I make the full batch, I freeze three of the servings individually.  That gives me several quick meals in the freezer for when I don't feel like cooking or its too hot to cook. Simply thaw and then gently reheat in a saucepan. I like it with some cheese and chopped onion on top.

And there you have it. My main meals of the week for the past seven days. I ate very well.  I hope you will be inspired to want to cook a few of these things for yourself or your family, and that you enjoy them as much as I do!!
