Another Sunday, another Meals of the Week post!  Sundays is the day that I set apart to share with you, my readers, all of the delicious meals I have cooked, shared and enjoyed over the past 7 days. Most days I eat at home with the occasional meal out.

Just because I am a single person, living on my own, is no reason for me to not enjoy tasty homemade meals!  I refuse to be someone who eats out of boxes and cans.  That is okay occasionally, but for the most part I want to put together meals for myself that are varied and tasty and homemade.

I find ready meals are loaded with salt, sugar and preservatives. I don't want to put all of that garbage into my body if I can possibly help it.  I am fit and I am capable so why not cook something decent for myself!

I try to eat a tasty variety of things.  For the most part healthy-ish. I try to get in  my five a day if I can , in one way or another.  Breakfasts are usually a tasty bowl of home cooked oat porridge.  I like it with a bit of cream on top and perhaps some golden syrup or date syrup. Yummy!  A glass of orange juice rounds that out and keeps me going until early afternoon which is usually when I have my dinner unless I am eating out or at my sisters!

Supper, is generally a light repast. Sometimes I am lazy and have a bowl of cereal. Sometimes its just toast and peanut butter or (naughty me) cheese whiz. (Does it help that I only eat 12 grain bread?)  Occasionally I will have a sandwich, a salad, or just some fruit.  

But to be honest after a hearty breakfast and that dinner, I am not overly hungry in the evenings, so its usually either toast or fruit, or both.  

I think your appetite changes as you get older and you no longer have the desire to eat a heavy three meals a day.  I do make the effort to sit at the table and eat properly and not just plunk down in front of the television.  Well, most of the time anyways. I like to pay attention to what I am eating! Its much more pleasurable that way!

And without further adieu, here are my meals from the past 7 days.  I think you will agree, it was, once more, a most delicious week!

Apple Danish Bars


SUNDAY September 17th - Dinner at Cindy's

Most Sundays I will have dinner at my sister's home with the family, or they will come here. This Sunday I had dinner at her place.  She cooked a lovely Pot Roast with all of the vegetables.  She makes the most amazing gravy.

The dessert was something which we only have once or twice a year.  Cindy's Apple Danish Bars They are so delicious!  Flaky pastry with a sweet lightly spiced apple filling and a sweet sugar glaze.  We enjoyed then warm with a scoop of ice cold vanilla ice cream on top. Delicious!

Chicken Broccoli Alfredo Pasta

MONDAY, September 18th - One Pan Chicken & Broccoli Alfredo

This was something that I had not made in a while, not since last September anyways.  One Pan Chicken & Broccoli Alfredo Pasta.  I am a huge pan of one pan suppers. Suppers where you can cook everything all in the same pan without having to cook things separately!  This is one such dish. This dish is incredibly easy to make and oh so tasty!

Everything gets stirred together in the one pan, with the broccoli being added just a little bit before it is done so that it doesn't overcook. Chicken breasts, garlic seasoning, penne pasta, cream, stock, parmesan cheese and the broccoli of course.  This is what I call a winner/winner chicken dinner!  I like to serve a crusty bread on the side and a salad.

Dutch Lunch Vintage Madness

TUESDAY, September 19th - Vintage Menu Madness

It was my Vintage Menu Madness day and this week I made a delicious Dutch Lunch from the Betty Crocker Quick and Easy Cookbook from 1954.  It was a really fabulous menu.

Quails, which were hotdogs stuffed with cheddar cheese, wrapped in bacon and grilled.  Easy Baked Beans,  Potato Salad, Dill Pickles, Corn Muffins and for dessert Creamy Rice Pudding.  All delicious, all very simple to make. Boy they sure knew how to eat in the 1950's! All the recipes can be found on the link above.

Sheet Pan Chicken Fajitas

WEDNESDAY September 20th - Sheet Pan Chicken Fajitas

Normally on Wednesday nights I go out with my father and his friend Hazel for supper but our usual place has been closed for a few weeks so the staff can have a holiday after a very busy summer. I didn't fancy going anywhere else so this week I stayed home and made myself some Sheet Pan Chicken Fajitas.

Sliced chicken breast meat, peppers and onions, tossed together with some oil and a nice mix of spices and then roasted on a baking sheet.  Easy peasy lemon squeezy.  Beautiful wrapped up in warm flour tortillas and served with your favorite add ins such as sour cream, salsa, guacamole, cheese, etc.  Quick, easy and delicious.  I treated myself to a sugar free jello cup and some whippy cream for dessert!

Juicy Beef Brisket

THURSDAY, September 21st. - Juicy Beef Brisket

On Wednesday, when putting something in the freezer I noticed a very small piece of Beef Brisket that I had forgotten about. I decided to take it out and cook it for dinner on Thursday. It was fabulously tasty.

I first rubbed it in a tasty mix of spices and popped it into a baking dish along with some stock and a BBQ sauce spooned over top. Cooked low and slow and tightly covered until it was melting mouth wateringly tender. More of the glaze was added and then it was popped back in the oven until it was richly glazed and burnished.

This was fabulously tasty served, cut into thin slices along with a baked potato and some Cheese Slaw. What a fabulous dinner and I had plenty of beef leftover for sandwiches for the next few days.

Air Fryer French Bread Pizza

FRIDAY, September 22nd - Air Fryer French Bread Pizza from scratch

My oldest daughter's husband was going to be away over night and so she came to spend the night with me. We had a fabulous night of mother/daughter time. We watched old movies, cheesy YouTube Videos, and treated ourselves to a supper of Pepperoni Pizza, with each of us fixing our own toppings. 

We had salad on the side and for dessert we tried out this dessert from McCain. Deep andDelicious Mini  Cookie Crumble Cake Cups.  After seeing the sugar content on one of them, I decided to skip out on having one and had a cup of sugar free jello instead, yes, with whippy cream.  We were both happy with our choices!  You just have to pick your battles.

Beef Pot Pie Soup

SATURDAY, September 23rd - Beef Pot Pie Soup

I had a quantity of brisket needed using up so I made myself an old favorite. Beef Pot Pie Soup. You can use ground beef in a pinch and still have a delicious bowl of soup.  Making soup is such a simple thing to do. My mother always made soup with leftovers from our roast dinners. 

Cubes of beef sauteed with a mirepoix of vegetables (carrots, celery, onions, garlic) for plenty of flavor. Some stock and cubed potato, swede (rutabaga), and cabbage are added along with some herbs and then simmered until everything is beautifully tender. A handful of frozen peas is thrown in and heated through.

While the soup is simmering you bake some puff pastry lids. I like to top it with some Everything Bagel Spice for added interest.  Ladle the hot soup into heated bowls, top with the puff pastry lid and dinner is served!

So there you have it, my meals of the week. Once again, I ate really well.  There was no waste and I got in a lovely variety of things.  Some healthy and some perhaps not so healthy! Life should be a happy mix of both don't you think?
