Marinated Olives

For the best flavor, marinate the olives for at least 10 days and serve at room temperature.

Serves 4

1 1/3 cups unpitted, green olives
3 garlic cloves
1 teaspoon coriander seeds
2 small red chilies
2-3 thick slices of lemon, cut into pieces
1 thyme or rosemary sprig
5 tablespoons white wine vinegar
Spread out the olives and garlic on a chopping board. Using a rolling pin, crack flatten them slightly
Crack the coriander seeds in a mortar with a pestle.
Mix the olives, garlic, coriander seeds, chilies, lemon pieces, herb sprig and wine vinegar in a large bowl. Toss well, then transfer the mixture to a clean glass jar. Pour in  water to cover. Store in the fridge for at least 5 days before serving
