This tangy fruity salsa is exceptionally simple and I’m wondering if I can even claim it as a “recipe”. I have a feeling however that, after trying homemade mango salsa for the first time, I’m going to want to serve it with just about everything. After trying it once, you might feel the same way.
On this occasion, I had the mango salsa as an accompaniment to a vegan chilli made with seitan (recipe for that one coming soon too!) and served the two together in wholegrain wraps. It was a perfect light dinner and also made for great leftovers the next day at lunchtime. The salsa keeps well for a few days in the fridge.

- 1 ripe mango
- 2tbsp fresh lime juice
- 1tbsp chopped fresh coriander (cilantro)
- ½tsp chilli flakes
- Peel the mango and remove the stone. Chop roughly and put in a bowl
- Add the remaining ingredients and mix well
- Serve as a dip or sauce - it's perfect in wraps and fajitas too!
