This recipe is a twist on the traditional Dominican Potato salad with apples giving a tasty mix to a classic latino side. My mother made this recipe over the holidays and has since then had to share it with her neighbors as they love the flavor of the potato salad. I am now sharing it with you this easy to make and kid friendly side that the whole family is sure to love.
Ingredients- 5 pound bag of Idaho or Russet Potatoes
- 6 apples of any variety
- 1 big white or yellow onions
- 1 cup of stuffed olives
- 1/2 cup of extra virgin olive oil
- 1 can of carrots and sweet spies 16 0z
- Table Salt or Sea Salt
- Peel and dice potatoes about 1/2 inch.
- Peel and core apples and diced 1/2 inch.
- In large pot add water and 2 tablespoons of table salt or sea salt.
- When water boils add potatoes, cover with lid and cook for 15 minutes.
- Diced the onion and olives while potatoes are cooking.
- After 15 minutes of cooking, strain potatoes and let cool off to room temperature about 15 minutes.
- In a large bowl add potatoes and rest of ingredients and mix.
- Add sea salt pinch by pinch and mix until you achieve desired taste for you potato salad.
- Chill in fridge fro 30 minutes and serve with lunch, brunch or dinner.
