If you can cook at home from scratch, you can save a lot of money. One thing that is easy to make is freezer waffles, also known as toaster waffles. The secret is to just make regular waffles, but only cook them for a couple of minutes so that they finish cooking when you put them into the toaster on a different day. Here’s a recipe for chocolate freezer waffles:
Ingredients:
2 cups white flour (unbleached is always best)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup cocoa
3 tbsp. sugar
1/2 cup butter (one stick)
2 eggs
1 3/4 cups of cold milk or butter milk
3/4 cup of milk chocolate chips
- Turn your waffle maker on to start getting hot. Then, in a medium bowl, mix together flour, baking powder, baking soda, salt, cocoa, and sugar. Set aside.
- In a small pan, melt the butter and set aside for a couple of minutes to cool.
- In a separate, smaller bowl, lightly beat eggs with a whisk.
- Measure and get the milk ready to pour.
- Add the melted butter to the eggs, whisking constantly to avoid making scrambled eggs. Then, quickly add the milk and whisk together to mix.
- Add the wet ingredients to the dry ingredients in the other bowl.
- Add the chocolate chips.
- Gently fold the dry and wet ingredients together with a large spoon or rubber spatula, turning the dry into the wet by scooping from the bottom of the bowl. Continue just until you no longer see dry flour. Do not overmix or the waffles will be tough. Let the mixture sit for five minutes to rest while you get a cup of coffee.
- Add a couple of scoops of the mix to your waffle maker. Cook for 2 minutes. They should be fairly limp since you’ll be cooking them again.
- Cool waffles as you make them. Then, place in a zipper gallon bag and freeze. When ready, simply toast them to desired crispness.
