My friend surprised me with a box of tangelos and marmalade from Florida for the holidays. While the tangelos were quickly eaten, the marmalade was barely touched. So a quick search led me to this marmalade pound cake recipe from Serious Eats.
The recipe makes for a cake that's moist and not overly sweet. I made it in a regular loaf pan, but used the leftover batter to test out my new silicone doughnut pan. A quick glaze with powdered sugar, marmalade and lime juice finished them off. They were just as moist as the cake and a lot more fun.
