I found some leftover cake bits that I had put in my freezer and it hit me that instead of cake pops (or just eating them out of the bag) I could make ice cream sandwich bites.
I didn't have any icing, so I added a bit of Nutella to hold it together. I rolled it out between parchment paper and cut it into two equal pieces. After spooning on some slightly softened ice cream (Ben&Jerry's Netflix & Chill'd) on one half, I topped it with the other, wrapped it in the parchment paper, pressed evenly and popped it back in the freezer.
After a few hours, I cut it into bite-sized pieces.
