I like my apples crispy. So when a couple of them looked like they wouldn't be a crisp as I like, yet not bad enough to toss, I thought apple sauce. Then I thought apple cake.

I found this recipe from A Pinch of Yum that seemed quick and easy (meaning I already had all the ingredients). And it was. The came out moist, full of cinnamon flavor and dotted with nice pieces of apple.
I would definitely make it again, but I'd try it with three apples that were a little more tart. Or I'd halve the recipe since it makes a 9×13 cake and still use two apples.
