Mac and Cheese for One (Maybe Two)

This is mac and cheese for one recipe is so simple, I’ve often made it when I get home from work late, or if I’m being lazy but I’m really hungry. It takes about 30 minutes from start to finish and can also be split and used as a side dish for two people. Let me know what you think!

Mac and Cheese For One (or two)

Ingredients:

1/2 cup macaroni
2 cups of water
1/4 cup shredded cheddar cheese
1 tbsps grated Parmesan cheese
1/4 cup milk
1/8 cup Panko seasoned breadcrumbs
1/8 tsp salt
1/8 tsp pepper
1/8 tsp onion powder
1/8 tsp garlic powder
1/8 tsp parsley
1 tbsp butter
1/2 tbsp olive oil

 

Directions:

Boil water and olive oil in a medium saucepan. Add macaroni to boiling water and boil for 12 minutes until soft. Drain and rinse under cold water. While draining the pasta add butter to saucepan over low heat until melted. Toss drained pasta in butter until well coated and add spices, then add milk and cheddar cheese, stirring constantly until cheese has fully melted and coats the macaroni. Spoon into an oven safe bowl.

For topping:

Preheat oven to 350 degrees. Sprinkle parmesean cheese, and breadcrumbs over the top of the mac and cheese and bake for 10 mins, until breadcrumbs are toasted. Enjoy!
