SNAP Challenge Day Five

This is the day where I planned poorly. I have a part-time contract and I went on-site thinking it would be a short visit. I’ll eat when I get home, I thought, so I didn’t even have breakfast. Turns out it was a long visit, and because I couldn’t buy lunch, I ended up getting home at around 4:30 not having eaten anything for the entire day. My mistake, but it happens – sometimes you are not near your food.

Breakfast –

  • Poached egg on toast
  • Cup of tea

Used:

  • 1 egg
  • Pepper (on hand)
  • 1 slice of toast
  • Tea bag

Lunch –

Ironically, one of my meals is similar to one of the ones that Mayor Cory Booker ate on his snap challenge and while he moaned that he had to eat lettuce and beans for breakfast (what??!!!), I get to sing that I had an incredibly tasty salad dish, with chips and a piece of fruit.

Really, this was so tasty that I was thinking it could have been served in a restaurant (and people would have paid a lot of money for it.)

Note: I was going to have a cold salad for this meal but it was a dreary day and the previous days’ of sautéing the greens worked out so well, I decided to throw the chopped escarole into the frypan. Very glad I did. Keep this in mind especially if your greens have started to wilt in the fridge.

  • Hot bean, onion, and salami salad

Sauté slice of onion diced in butter, when translucent add 1/3 can of beans, 2 slices of salami cut up into small pieces, and the rest of the escarole chopped up into small pieces. Cook until warmed.

  • Tortilla chips
  • Tangerine

 

Used:

  • 2 slices of salami
  • Rest of escarole
  • Slice of onion
  • Butter
  • 1/3 cup of beans
  • 8 Tortilla chips
  • Tangerine

To drink –water.

Afternoon snack

  • 11 Vanilla cookies (1 serving)
  • Cup of tea

Dinner –

Dinner was prepared in a rush. Although it was tasty, it could have been better if I were able to let it simmer for about 20 minutes and if I had added just a bit of chili spice (which I didn’t have.) Because I had gotten the no-salt added diced tomatoes I did find myself adding a little bit of salt to this dish.

Note to self – save money to buy chili spice in a future grocery trip.

  • Easy chicken chili

Saute cut up green beans with onion in butter when soft add, rest of diced tomatoes included juice with 2/3 cup frozen vegetables, 1/2 chicken thigh. Cook until heated and serve (see note about simmering for future)

  • Tortilla chips

Used:

  • Rest of diced tomatoes and juice
  • 2/3 cup frozen vegetables
  • ½ chicken thigh cut up
  • Slice onion
  • Rest of fresh beans
  • Butter for sautéing
  • Salt
  • 8 tortilla chips

Evening snack

2 raw carrots.
