SNAP Challenge Day Four
I’ve been saving the eggs for later in the week because unlike the meat or open beans, they are not going to quickly go bad. 2 eggs is plenty for an adult’s breakfast and when you add some sautéed onions, you not only get extra flavor but also extra texture.
One note, my son had used the toaster and turned up the setting a bit. I ended up getting toast that was a little darker than what I like, but not to worry, just like my mother did, I scraped off the burnt stuff and ate the rest.
Breakfast –
Burnt toast is just bread that needs a little help.
- Scrambled Eggs with toast
(Sautee Diced up slice of onion in butter, when translucent fold in 2 beaten eggs and cook until firm, season with pepper)
- Cup of tea
Used:
- 2 eggs
- 1 slice onion
- Butter
- Pepper (on hand)
- Tea bag
Lunch –
The plan was to have a ham and cheese sandwich, the only problem is that it looked so alone on the white bread. Looking at what I had to work with, I toasted the bread for crunch appeal and then I added a bean tomoto hummus-spread to the sandwich to bulk it up and add flavor.

Didn’t have the time to cook a lunch and so I went with a quick one. I also didn’t have any cheese left (used the last of it yesterday boy would I have liked a slice on my ham) and my sandwich looked a little dry, which is why I mashed up a few white beans and added some diced tomatoes to make a hummus-like spread for the sandwich.
- Ham, escarole, bean mash sandwich
- Tortilla chips
- Tangerine
Used:
- Slice of deli ham
- Two slices white bread toasted
- Bit of escarole
- 1 Tablespoon white beans mashed with 1 teaspoon diced tomato
- Tangerine
- 8 tortilla chips
To drink –water.
Afternoon snack
- 11 Vanilla cookies (1 serving)
- Cup of tea
Dinner –
Tonight’s dinner was certainly filling. I used some of the fresh beans, frozen vegetables, and a slice of onion, along with 1/2 chicken thigh and a 1/2 cup of pasta (1/2 cup measured uncooked.) No need for bread as an added filler to the meal, this was enough.
In the future, I might try adding a packet of soy sauce or two just to liven things up. (Those can be gotten free at restaurants or just ask your friends to save them for you if they order Chinese food.)
- Pasta with chicken, vegetables, green beans, and onions
- saute onion and fresh beans in butter until onions are translucent, add chopped up chicken, precooked pasta, and frozen vegetable. When vegetables are starting to get soft, add diced tomatoes and a few spoonfuls of the tomato packing liquid.
Used:
- ½ cup cooked pasta (1/2 cup measured uncooked)
- ½ precooked chicken thigh
- 2/3 cup frozen vegetables
- Handful of fresh green beans
- 1/3 cup diced tomatoes
- 1 slice onions
- butter
Evening snack
Didn’t need a snack, so I skipped it.
