I don't know about you guys, but this Summer was gone in the blink of an eye. It was here... and then gone before I knew it! We have been busy BBQing up a storm, hiking, and spending a lot of time on the beautiful beaches of Kauai. I had the opportunity to spend a month in New York City and take a Summer Intensive Photography Course at Parsons School of Design. It was an amazing experience. I will post photos from the course soon! It was the first time I have been away from my daughter for that length of time, so that was an experience in itself. While attending classes, I also decided to pursue a second Bachelor's degree at the New School in New York. I will be taking mostly business classes, school starts in a few weeks for me.... not sure if I am ready after being out of college for 13 years!

I don't know how the Summer heat has been in your neck of the woods, but it has been extremely hot and humid here. I always struggle to find ways to keep myself, as well as my family, properly hydrated. I love lemon water but it is nice to have a change once in a while. Since our garden was overflowing with Mint, I thought, "Hey!" why don't I load my lemon water up with some! YUM.
What is your favorite way to flavor water?
Lemon Mint Water- 32 Oz. Water
- 4-6 Sprigs of Mint (or more if you feel like it!)
- 1/2 C. Lemon Juice
- Stevia to sweeten to taste
Mix all ingredients together in a pitcher. Let sit for about 30 min. to enhance flavor. Store in fridge.
