Ingredients
- Topping:
- 1 cup flour
- 2/3 cup brown sugar
- 1/4 teaspoon salt
- 4 Tablespoons melted butter
- 1/2 teaspoon cinnamon
- Filling:
- 2 packages cream cheese (soften)
- 1/2 cup sugar
- 2 eggs
- zest of one lemon
- 2 Tablespoons lemon juice
- 1/2 teaspoon vanilla
Instructions
- Gather all of your ingredients, make sure to leave your cream cheese out to soften a bit and preheat the oven to 325 degrees. Don't forget to paper line your cupcake pan.
- Prepare your topping. Mix your flour, brown sugar, salt, cinnamon and melted butter together and set aside.
- Now for the filling, mix together the cream cheese and sugar until nice and fluffy.
- Add your eggs one at a time, mix well each time.
- Zest 1 lemon and add lemon juice and lastly the vanilla, blend it well.
- Fill ¾ of the way and dont forget to generously add the crumb topping.
- Bake for 25 mins.
