Lavender Baked French Fries.

One of the best French Restaurants I have ever been to is in the Kensington area of San Diego called Blue Boheme. If you have never been, it is a must! The interior reminds me of a wine cellar we visited in Paris. There are candles melting down the walls, and cobblestones everywhere. It is very romantic! Not to mention their Lavender Infused Shoe String Fries are to die for!

And while I will not ever try to compete with their amazingness…. the other night I decided to make a baked version of these wonderful Lavender Fries with Purple Peruvian & Russian Banana Fingerling Potatoes. Yes they sound fancy but they were super easy to make… and I found the mixed bag of fingerlings at Whole Foods.

Lavender Baked French Fries.

Ingredients:

  • One Small bag of Fingerling Potatoes {or 3 Large Potatoes}
  • 1 Tbs. freshly chopped Lavender {can you leaves or stem}
  • Salt and Pepper to Taste
  • 2 T. Olive Oil

Preheat oven to 400 Degrees. Rinse and dry potatoes. Cut potatoes length wise until the thickness you desire is achieved. These are about 1/4-1/2 inch thick. Place seasonings and olive oil in medium mixing bowl mix well, then add potatoes, stirring until well coated. Bake in oven for 15 minutes then flip, bake another 10-15 minutes until well browned. 

I added a bit more salt after they were done baking…
