By Djridings @fivethingsnow

On Monday 26th June, Skylon, the modern British restaurant, bar and grill within the Southbank Centre, will debut a new menu designed by recently appointed Executive Chef, Kim Woodward. The dishes will be a celebration of exceptional, seasonal ingredients and will demonstrate Kim’s skillful cookery, confirming her position as one of London’s top chefs.

Cheshire-born Kim joins Skylon from the Savoy Grill, where she was the first female Head Chef in the restaurant’s 126-year history, having worked with the Gordon Ramsay group for ten years prior. Kim is recognisable as one of the UK’s top chefs, thanks to television appearances including Saturday Kitchen, competing in BBC’s Great British Menu and appearing as a chef mentor on ITV’s Yes Chef.

Kim’s menus will be ingredient led, bringing diners expertly sourced produce from across the UK. Sympathetically crafted to enhance the distinctive flavor profiles of each component, dishes will range from delicate starters such as hand-dived Orkney scallop ceviche with pink grapefruit and heritage radish, cucumber and truffle, to bold dishes such as Scottish Angus Cross beef fillet with wild garlic, grelot onions and crispy shallots. Touches of European influence will be evident throughout the menu, with the likes of roasted veal sweetbreads with French white asparagus, toasted almond foam and sherry vinegar gastrique and desserts such as iced cappuccino soufflé with baileys chocolate bonbon. In addition to the a la carte, restaurant menus include a six-course tasting menu, theater menu, set lunch and weekend brunch.

Kim will continue the produce-led approach in a new menu for Skylon Grill. Championing Great British classics, dishes such as Cumberland ring sausage with spring onion mash and sage and onion gravy feature alongside beer battered cod fillet with triple cooked chips, minted peas and curry aioli. For a touch of nostalgia, desserts include profiteroles with vanilla cream, salted caramel and chocolate sauce and an old-school favourite, Knickerbocker glory. Each Sunday, guests can also enjoy a traditional roast dinner with the choice of roast corn-fed lemon chicken or Aberdeen Angus roast beef sirloin with all the trimmings.

Commenting on the launch of new menus, Kim comments “When creating the new menus, I wanted to bring back much-loved classics which are often forgotten with my own, more refined approach. I also wanted to showcase the quality of ingredients available across the UK and within Europe as we are so lucky to have such amazing unrivalled choice so nearby.”

In addition to Kim’s new menus, the interiors have been refreshed and revived to mark a new era for the iconic riverside restaurant, ideally located for theater goers and the Southbank’s weekend crowds looking to dine or simply enjoy a drink with an unrivalled view of the Thames.
