Kill Devil Punch

It’s been a while since I’ve made a punch so now that I have my new punch bowl I thought it was time to remedy this.

Kill Devil Punch (created by Phil Ward)

250ml amber rum
170ml pineapple juice
140ml simple syrup110ml fresh lime juice
Raspberry ice (340ml water and 24 raspberries frozen to make 1 large block of ice)140ml chilled Champagne
12 raspberries
12 lime wheels

Combine the first 4 ingredients and chill for 1 hour in the fridge.  Next stir and strain this mixture into your punch bowl.  Add the raspberry ice and fruit garnish.  Finally pour in the Champagne and stir once.  Serve and enjoy!  You may want to taste test this before adding all of the simple syrup because I found it a little on the sweet side.
