The craze for sweet potato fries is taking over the menus of many restaurants. The first time I tried these sweet and salty fries was at Taylor’s Refresher in Napa Valley, CA. I was hooked after one bite! I decided to whip up a batch on a whim. I complimented the salty and sweet of the fries with a cool dill dipping sauce. One word …..YUM!
Step 1: Wash and place clean sweet potatoes on a cutting board.
Step: 2 Peel the sweet potatoes
Step 3: Slice the sweet potatoes in half and then slice them again creating fries.
Step 4: In a large mixing bowl, mix together the sweet potatoes, oil, and your favorite seasonings.
STEP 5: Place well-seasoned fries on a cookie sheet with parchment paper. Bake at 450 degrees for 20 min.
Serve hot and enjoy!!!

Ingredients:
- Olive Oil, for tossing
- 5 sweet potatoes, peeled and sliced into 1/4-inch long slices, then 1/4-wide inch strips, using a crinkle cut knife
- Oil
- 1 tablespoon House Seasoning (recipe follows)
- 1/2 teaspoon paprika
Directions:
Preheat oven to 450 degrees F.
Line a sheet tray with parchment. In a large bowl toss sweet potatoes with just enough oil to coat. Sprinkle with House Seasoning and paprika. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes. Let cool 5 to 10 minutes before serving.

House Seasoning:
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
For the House Seasoning:
Mix ingredients together and store in an airtight container for up to 6 months.
