INGREDIENTS
- 2 large potatoes
- 1/4 cup tomato puree
- 1 tsp. cumin seeds
- 1 green chili, chopped
- 1/2 tsp. turmeric powder
- 3 tbsps. olive oil
- 1/2 tsp. cumin powder
- 1/2 cup coconut milk
- Salt to taste
- Parsley for garnish
DIRECTIONS
1. Boil potatoes in salted water for 10-15 minutes.
2. Peel the skin and cut the potatoes in slice.
3. 0 Heat oil to a pan and toss and cook cumin seeds, tomato puree and green chili for about 20 seconds.
4. Add in the boiled potato slice coconut milk, salt, and turmeric.
5- Stir and cook for 4-5 minutes.
6. Garnish with parsley
