Juice of the Week: Parsley, Beet & Fennel

October 2013

A person who has good thoughts cannot ever be ugly. You can have a wonky nose and a crooked mouth and a double chin and stick-out teeth, but if you have good thoughts they will shine out of your face like sunbeams and you will always look lovely. -Roald Dahl

Beet Parsley

Drinking fresh juice for health is like thinking good thoughts for beauty. Even if there are pastries and maybe too much caffeine throughout the day, a cup of fruits and vegetables first thing in the morning goes a long way for health and wellness (and maybe even for a wonky nose and a crooked mouth too)!

Beet Parsley 02

The burgundy color of this juice is a perfect accent for fall’s changing leaves, and the parsley adds a bit of spice to your cup! Add more apples if you want sweeter sipping.

Juice of the Week

4-6 oz fresh ginger, peeled
2 bunches of parsley
4 organic grapefruits, peeled
1 local beet, peeled + greens
7 organic lemons, peeled
2 organic apples, cored
1 bulb organic fennel

Directions

Combine according to your juicer’s instructions.

Juice of the Week documents my goal to drink fresh juice daily (made in batches weekly).
