Juice of the Week: Carrot, Grapefruit & Ginger with Chia Seeds

If the flavors of grapefruit were embodied in a person, she’d be the friend to say something so abruptly sassy, you’d scramble not to spit out your drink in an unsuccessful attempt to stifle laughter. Grapefruit has the power to pucker my face and to change my awareness to the present moment. Even when balanced with other flavors, the admirable grapefruit still has a way of pronouncing itself. In the case of this Juice of the Week, the tart citrus blended with a more unusual ingredient.

Two Glasses of Grapefruit Juice

Like myself, the tiny chia seed has matured significantly since my childhood, when I used to groom its offshoots on a clay animal. Once an infomercial celeb, these tiny seeds have blossomed into a health hero packed with nutritious omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.

Chia Seeds and Juice

Add a teaspoon or so of chia seeds to your juice serving before you go to bed, wake up, and those seeds will be slimy, gelatinous gems of health for your morning sipping. If nothing else, drinking your juice this way will make your family think you’re even weirder, but remember the lesson of the grapefruit: be tart and be pronounced!

Grapefruit Juice

Ingredients
makes ~ 1.5 quarts

2 lbs organic carrots
5 organic grapefruits, peeled
~3 inch chunk of fresh ginger, peeled

*chia seeds

Directions

Combine according to your juicer’s instructions. Add a teaspoon or two of chia seeds to your juice and let sit overnight.
