Italian Cod with Sauteed Vegetables

So why does a financial blog have a post on cooking?  A big part of growing wealthy is living on less than you make.  A big expense that a lot of people have is eating out.  Even eating at casual chains, a family of four is looking at $50 or more per meal.  Fast food is still $20-$25 per meal.  Eat a few meals at home each week, and suddenly you have that $300-$500 needed to invest regularly.

One reason many people don’t cook is because they never learned how.  Another big reason is that the recipes they know involve lots of ingredients and take a long time.  Cooking doesn’t need to take a long time or require a lot of exotic ingredients you’ll buy and then never use again, however.  That is why I will periodically post a recipe for a simple meal you can make, quickly.  Today’s meal costs about $10 for a family of four but would cost $15-20 per person in a typical restaurant.   You can make it in about 20 minutes from start to finish – less than the time required to gather the kids and get into your local Applebees.

 Italian Cod and Vegetables

Ingredients:

Olive Oil

Cod for four (fresh or frozen and defrosted over night in the refrigerator)

1 Onion

1 can diced tomatoes

Salt and Pepper

Garlic Powder

Italian Seasoning or Dried Basil

1 Package Frozen Italian Vegetables

Directions:

1.  Heat a couple of tablespoons of olive oil on the stove over medium high heat and swirl to coat the bottom of the skillet.

2.  Cut fish into four pieces.  Put salt, pepper, and seasoning on both sides of the fish.

3.  Add onions and fish just before oil starts to smoke.  It should sizzle when you put it into the pan.

4.  While the fish is cooking, put a couple of tablespoons of oil into another skillet over medium-high heat.  When oil is hot, add frozen vegetables.  Sprinkle with salt, pepper, garlic powder, and italian seasoning.

5.  Cook fish for a couple of minutes on each side.

6.  Add tomatoes to fish and sprinkle with garlic powder.  Cook a few minutes more until fish begins to flake apart.  DO NOT over-cook!  Remove from heat when ready.

7.  Periodically stir vegetables.  Cook just until hot.

Serve with rice or a baked potato.
