Indulgent Chocolate Brownie Trifle (for People Who Love Dessert but Don’t Like Trifle!)

It’s my last post for the year and of course it had to be a festive recipe. I’ve been busy in the kitchen baking edible gifts and trying to do as much advance prep as I can for Christmas dinner and if you’re there too I hope it’s going smoothly! We’re ending the year on a sweet note with a recipe that’s inspired by a classic. Let’s face it, trifle is wildly popular at this time of the year but (confession time) I’m really not a fan. I think it’s the soggy combination of boozy finger biscuits, custard and jelly and the piles of cream on top that give me the heebie-jeebies, and it’s just not a dessert that I’ve ever taken to. There are very few dishes that I’ll avoid but when it comes to trifle I’m on a strict “no thanks” diet, ha!

Trifle is usually layered with cake, custard, fruit and cream but I’ve taken it upon myself to give this dessert a makeover. This chocolate trifle with brownies is not your average traditional trifle but it’s absolutely magic, especially if you’re a chocolate lover.

Indulgent Chocolate Brownie Trifle (for People Love Dessert Don’t Like Trifle!)

Rather than creating a huge bowl of trifle I assembled these as individual portions, so fun! The base is a dense chocolate brownie and it’s topped with chocolate mousse, vanilla ice cream, crispy meringue and fresh berries.  If you like a touch of tipple in your trifle you could certainly add a splash of chocolate or coffee liqueur to the brownies before assembling. If, like me, you’re not on team trifle then do give this indulgent chocolate trifle-with-a-twist recipe a go. It’s such an easy layered dessert and you can prepare all the elements in advance and assemble just before serving.

CHOCOLATE BROWNIE TRIFLE

Chocolate brownies

  • 180 g castor sugar
  • 2 large eggs
  • 60 g butter, melted
  • 85 g cake flour
  • 25 g cocoa

To assemble

  • 4 serving glasses
  • 400 ml chocolate mousse
  • 4 scoops vanilla ice cream
  • 12 meringues kisses
  • fresh berries, to decorate

1.) To make the brownies: Preheat the oven to 170ºC. Line a 20 cm square baking tin with baking paper and grease well.

2.) Place the sugar and eggs in a mixing bowl and stir together by hand to combine. Mix in the butter. Sift in the flour and cocoa and mix to combine.

3.) Scrape the batter into the tin and spread into an even layer. Bake for 20 minutes until set and firm on the outside but still soft in the center. Allow to cool completely.

4.) To assemble the trifles remove the brownie slab from the tin. Using the serving glass as a guide cut out four circles from the brownies slab (save the offcuts for later). Gently press a brownie circle into each glass.

5.) Divide the mousse between the glasses, spooning a layer over the brownies. Crumble the brownie offcuts over the mousse.

6.) Add a scoop of ice cream to each glass. Top with meringues and fresh berries. Serve immediately.
