Cannoli is a sweet Italian pastry with a soft cheese and candied fruit filling. The aroma of baking filling the air, the satisfaction of Cannoli has no bounds as it leaves you with pleasant memories and you want to have some more.

If you want to dazzle your family and friends when they come around during one of the holiday evenings, here is how to make your dream open Cannoli. If you feel like leaving out liquor, boil ½ cup of apple juice or cider until it decreases to ¼ cup. Ensure it cools off totally before going on with the recipe. You can skip the schnapps entirely if you wish and replace it with rum, mint or vanilla extract.

Ingredients

  • 8 ounce of softened Mascarpone cheese
  • 1 cup of fat-free evaporated milk
  • 1 cup of powdered sugar
  • 1 teaspoon of cinnamon
  • 1 tablespoon apple schnapps or rum extract
  • ¼ cup of minced figs, dates, dried cranberries or raisins
  • 6 – 8 of prepared cannoli shells

Preparation

Step 1: Mix all the 7 ingredients together in a bowl and beat until smooth

Step 2: Scoop ½ or ¼ of the cheese filling into a plastic baggie at once

Step 3: Snap off a corner of the baggies and close the open part

Step 4: Pipe Cannoli filling into one end of the shell and complete the filling from the other end. Repeat the step for the remaining shells.

Step 5: Cover and put into a refrigerator for 30 minutes for the filling to set.

Step 6: Remove from the refrigerator, dust with more powdered sugar if needed and enjoy your dream open Cannoli with your family and friends.
