How to Make and Use Toasted Seed Mix

Happy 2023 foodies! I hope you had a lovely festive season filled with delicious treats. Let’s kick off the year with an easy and wholesome recipe. This simple seed mix adds flavor and texture to both sweet and savoury dishes, and is nutrient rich! I always have a jar of it in my pantry.

You could make your own seed mix by simply mixing the seeds together, but toasting them in the oven really enhances their flavor and doesn’t take too much extra time at all. I love adding chia seeds into my seed mix but this isn’t essential. In fact, you can use any seed combination you like.

I use my seed mix most often at breakfast and love sprinkling it over my granola and yoghurt or smoothies in the morning. There are lots of ways to use this mix and incorporate some seedy goodness into your day, here are a few ideas:

  • use to make seed bars
  • an edible gift for your health conscious loved ones
  • use as a salad sprinkle for extra crunch
  • sprinkle over muffins and bread before baking
  • use as a topping for yoghurt or smoothies
  • add dried fruit and nuts for homemade trail mix or a quick snack
  • sprinkle over roasted veggies

TOASTED SEED MIX

  • Servings: Makes 200g

65g pumpkin seeds
65g sunflower seeds
25g brown linseeds
25g sesame seeds
20g chia or poppy seeds (optional)

1.) Preheat the oven to 180ºC (160º for fan assisted).

2.) Sprinkle the pumpkin seeds and sunflower seeds onto a dry, ungreased baking tray (make sure the tray has sides so the seeds don’t spill off the edges). Roast the seeds for 4 minutes.

3.) Remove the tray from the oven and add the brown linseeds, sesame seeds and chia seeds (if using). Return to the oven for 7 minutes or until the seeds are lightly toasted and have a nutty aroma.

4.) Set the tray aside until the seeds are completely cool. Transfer to a glass  jar or airtight container.
