Homemade Garlic Hummus

I think it goes without saying that I REALLY REALLY miss my friends in Chicago. I miss going out after work just for the heck of it, random get-togethers, and I really miss my book club. The ladies in my book club never shied away from making a full spread when it was their turn to host. All of them could whip up some mean snack recipes and one of my favorites was my friend Casey’s garlic hummus. It was absolute perfection from the consistency to the amount of garlic. I need to make a note to get her recipe from her, because I gave it a whirl and while mine did turn out delicious, it’s just not the same. I miss you Casey and your perfect hummus!

One thing I did differently was that I used sunflower butter instead of Tahini paste. First, I couldn’t find Tahini paste in my local grocery store and second, there was a sale and I got the sunflower butter for $2.99. If you’ve ever bought Tahini paste, you know that’s a better price!

Homemade Garlic Hummus Recipe:

1 can chickpeas – rinsed and drained
1 Tablespoons Tahini paste or sunflower butter
1/2 cup lemon juice
4-5 large garlic cloves
2-3 Tablespoons olive oil
1/4 cup water
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon smoked paprika

Start by adding the sunflower butter or Tahini paste to your blender.

Then, add your chickpeas and blend until smooth.

Add water until it is a smooth consistency, I used about 1/4 cup, but you can add more if needed. Add your olive oil and give it a last quick blend. This is definitely a recipe you want to try as you blend, taste it each time you add something and add more if you think it’s necessary!

Pour into a bowl and top with more smoked paprika. You can definitely use regular paprika if that’s what you have!
