Homemade Cheesecake Using Kiri!

Yes, really! Today, I had family day and as always, I like to take my mother in law a dessert since I’m the dessert queen!

It was last minute, our maid is leaving and between packing up her things and sorting the house, I didn’t have much time to make a chocolate gateau! So, I racked my brains to find something to make…
I found a recipe online for Raspberry Mousse. I was about to attempt that when I realised I had no raspberries, I did have strawberries though.
I caught my eye on the kiri and wondered, hmmm, could kiri work for mini cheesecakes?
I whipped up the kiri, some fresh cream, caster sugar and about 10ml of milk….I fired in half a dozen strawberries. It was a little runny so I added some flour to thicken it up. It actually tasted really really good. I was amazed.
Now for the base, digestive biscuits mashed up with a taste of melted butter and put in the fridge to set. It worked…
I then added some flake and fresh strawberries on top.
They were a hit, although hubby did say it tasted more like yoghurt than cheesecake… I actually thought the kiri was much ‘cheesier’ than Philadelphia.

The pics aren’t great, I know. I used mocha coloured cup holders and you can’t see the base, I really need to get some cute glass dessert cases.
