Holiday Treats:
Paleo Berry Fig Pudding
Holiday treats are everywhere this time of year. Puddings are one of my fav types of treats this time of year. This is because they’re easy to make, cool to the palette & delicious to family members of all ages. We’ve created several tasty puddings over the past few weeks, like the Pumpkin Pudding, Eggnog Pudding and an Apple Cinnamon Pudding. Here is another delicious gem for the holidays to add to your repertoire.
This pudding is perfect when crowned with fresh, sliced fruit and raw almonds.
Delicious as a paleo breakfast, snack or anytime, really, this awesome antioxidant-packed treat is sweet, fresh, and filling to the max! Chia seeds expand in your tummy, making you feel full without eating many calories. Also, figs and chia seeds together have tons of fiber, and deliver a curiously savory flavor of nut and date. Simply scrumptious.
This super treat can be ready in just 20 minutes or less, and the chia seeds do most of the work when they expand in the coconut milk. It is the seeds that will become pudding-textured, sort of like tapioca. They will also give out the nutty taste. The figs will deliver the sweet punch.
Ingredients
- 1 tbsp Coconut extract or nectar
- A pinch of vanilla bean
- A 1tbsp of almond extract
- 1 ½ cups coconut milk
- 6 large figs, preferably organic and ripped
- ½ cup of chia seeds
Stuff You Need:
- Blender
- Bowl
- Fork
- Refrigeration
Procedure:
- Mix milk, all extracts and vanilla using the blender
- Add the chia seeds. They will be soaking in the liquids for about half an hour. Remember that chia seeds are sticky so stir them often.
- Transfer to a different container that you can refrigerate, and you can leave it even overnight.
- You will see the transformation of the texture on your own. It is a lot of fun and it will taste heavenly!
Alternatives
Aside from the topped fruit and slivered almonds, also consider topping the pudding or mixing it with
- Cacao crumbs for a chocolatey finish
- Bananas! Bananas! Bananas!
- A tiny dollop of raw almond butter (it is very delicious)
- Bacon bits- exotic but perfectly paired
- Coconut flakes, and coconut bits
