Holiday Pumpkin Ice Cream Recipe

imageThanksgiving weekend has come to an end and the holiday season is now in full swing. The smells of winter fill the air and leftovers are abound. If you went holiday DIY this year you might have some leftover pie to serve up. (Or eat for breakfast- we don’t judge!) Don’t let that little bit of extra pumpkin puree sit in the back of the freezer until next year. Pull it out and whip up a creative and cool leftover dessert: pumpkin spiced ice cream.

Pumpkin Spiced Ice Cream

Adapted from Williams-Sonoma

Makes about 1 Quart

What You’ll Need:
1 cup fresh pumpkin puree or canned  unsweetened pumpkin puree (No Additives!)
1 tsp. vanilla extract
2 cups heavy cream
3/4 cup firmly packed dark brown sugar
5 egg yolks
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. salt
Pinch of freshly grated nutmeg
Optional: 1 Tbs. bourbon

Directions
In a bowl, whisk together pumpkin puree and vanilla. Cover the bowl and put it in the refrigerator for at least three hours.
In a heavy saucepan, combine 1 ½ cups of cream and ½ of brown sugar over medium heat. Cook until bubbles form around the edge of the pan.
While the saucepan is heating up, combine the egg yolks, spices, salt, and remaining cream/brown sugar in a separate bowl. Whisk until the sugar begins to dissolve.
Remove the cream mixture from the heat and gradually whisk approximately ½ cup of hot cream into the egg mixture. Pour the entire egg mixture back into the pan and cook over medium meat.
Stir the custard at a low simmer until the mixture can coat the back of the spoon. DO NOT let the custard boil. Strain through a fine-mesh sieve into a bowl.
Place the bowl into a larger bowl filled with ice water. Stir until cool.
Whisk pumpkin mixture into the custard. Cover with plastic wrap pressing it directly onto the surface of the custard.
Refrigerate until chilled. (About three hours)
Transfer the custard to an ice cream maker and freeze according to manufacturer’s instructions. Add bourbon during last minute churning.
