Herbed Potato Bites Recipe

Our kids love French Fries and Potato Wedges and ask for them whenever we're within earshot of any fast food joint. The problem is that these fries/wedges are more often than not deep fried and loaded with too much salt. Not exactly the most nutritional option for our little ones!

So, I decided to make my own healthier version and thus was born today's recipe - an easy option for serving delicious potato bites which are good carbs for little ones. And all this without too many spices and hardly any oil or artificial flavors!! Trust me, your babies will be hooked on to these, and so will you as they take so little time to get ready! These are also perfect for a kiddie party or as after-game snacks, so let's check it out!

Herbed Potato Bites Recipe

Ingredients:

  • 2 boiled and cubed potatoes
  • 1 tbsp refined oil
  • Salt to taste
  • A pinch of black pepper
  • 1/4 tsp mixed dry Italian herbs

Method:

1. Heat oil in a non-stick pan. Once it is hot enough, add the cubed potatoes. Saute for one minute.

2. Season the potatoes with salt, black pepper & mixed Italian herbs. Stir well but take care not to break the cubed potatoes. You can skip the pepper if your child doesn't like it.

3. Cook them for 3-4 minutes or until the potatoes turn slightly crisp around the edges. Serve warm.

Yes, three steps and your snack is ready - can you believe it? You can serve it with a glass of fresh orange juice and make the meal more nourishing and refreshing for summer. If you're planning a picnic, this is a must have! Serve it along with an assortment of chutneys or ketchup and they'll be gone before you know it!
