Herbed Chickpea Sweet Potato Salad

A great side dish is something to be celebrated.  Its one of those things you can eat with anything, bring to picnics or just sit in the corner eating it all by yourself.  This great salad is pure heaven!

Sweet potatoes and  chickpeas are a match made in heaven, two of my favorite ingredients tossed in a glorious zesty dressing, if you don’t believe me give it a try yourself and tell me what you think.

HERBED CHICKPEA SWEET POTATO SALADserves 4

Ingredients 

  • 1 large sweet potato, peeled, cubed and roasted with a little oil
  • 1 can chickpeas, drained and washed
  • 3 ribs celery, diced
  • 1/4 grated or diced red onion
  • 2 tbsp parsley, chopped
  • 1 tbsp dill, chopped
  • 1/4 cup vegan mayonnaise
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • salt and pepper to taste

Directions

In a large bowl combine the sweet potato, chickpeas, celery and onion.

In a small bowl combine the mayonnaise, lemon juice and zest.

Pour over salad and toss.  Fold in the herbs  and season.

Refrigerate or serve Immediately.
