Lemon and Garlic Chicken with Grilled Mediterranean Vegetables form Hello Fresh

I have personally never had any experience with online grocery shopping until now so the concept itself was quite exciting for me.
As some of you may have recognised, one of the founders of Hello Fresh, Tom Rutledge, was one of the top 24 Master Chef contestants in 2011 sooo I was quite keen to check out what recipes he and Diogo had designed themselves!

I have said this many times before and I will say it again; the recipes which I post up are recipes which anyone can follow and cook. I am no pro chef (and clearly no ex master chef contestant) so basic and simple recipes are what I like to use. Recipe for the Lemon and Garlic Chicken with Grilled Mediterranean Vegetables

- Heat a griddle pan or barbecue to medium heat. Flatten out the chicken fillets and sprinkle them with lemon juice and a good grind of salt and pepper.
- Prepare the vegetables by slicing the eggplant into 1 cm thick rounds. Slice the zucchini lengthways into 1/2 cm thick ribbons. Chop the capsicum.
- Cook the chicken and vegetables on the grill. Cook the chicken for 3-4 minutes on each side or until done. Turn the vegetables and cook until they are tender.
- Once the vegetables are cooked through layer the grilled vegetables on the center of the serving plate. Place your cooked chicken on top. Dress with lemon juice and sprinkle over the fresh oregano leaves.

Personally I thought that the ingredients given were fresh (quite generous too) and the recipe was very easy to follow. I didn't need to use all up the vegetables provided so I kept the rest in the fridge. Days later, the vegetables were surprisingly still just as good so you can see how fresh they were (extra thumbs up).How it works is that you first choose a meal plan, have it delivered to your door step (hi-5 to free delivery), follow their recipes as provided and dinner is served! If you aren't home then the package will be left in a safe cool place nominated by you. Alternatively they may ring on your neighbours' doorbell and leave it with them. So I guess maybe it is time I started to befriend my neighbours if I know I won't be home. The downside though was the packaging of the ingredients itself; it came in a large white paper bag. I was expecting the ingredients to be better packaged in something a bit more rigid such as a box to ensure that the ingredients wouldn't get damaged or bruised on the way home. I also noticed that the recipe didn't actually mention anything about garlic in the whole recipe. Luckily I had noticed this in time to save my dinner. No garlic means no garlic chicken =( and we all know how much I loveeeee my garlic. Although in saying that, the Hello Fresh crew are aware of this error so hopefully the recipes will be fixed up shortly! I managed to cook everything a bit over 30 which was a surprise considering I cook at the rate of a snail. It tasted healthy and I didn't feel gluggy or gross after which is the worst feeling one could have after a nice meal. *rubs tummy*Hello Fresh
