The weather is all over the place at the moment. No sooner did I write my meal plan than the temperature spiked, meaning I had to rethink the entire week. That, and the oven died ... yet again (!), so I had to scramble to find other dishes that could be made without said oven. This is why it pays to have a few healthy meals up your sleeve that you can rustle up without any notice. In summer for us it is a BBQ and salad; easy peasy!
