Healthy Weekly Meal Plan – Week 39

I am a huge fan of having a few emergency meals in the freezer, and one thing I really like to keep on hand is a pie. All you need do with a pie is turn on the oven and slip the pie onto a tray. Add a salad, or a few simple vegetables, and dinner is sorted. So easy, even My Grumpy can do it, which is exactly what happened this week when I was pressed into shopping with The Princess. Find a good store-bought variety and keep it in the freezer. You never know when it will come in handy.

Our autumn plan this week is packed with easy healthy meals. A simple miso ramen, sheet pan sausage dinners and restaurant quality pasta sauce with hidden veg so the kids can't pick it out. Then finish off the day with our delicious toffee apple martini. Enjoy!

Spring Meal Plan

Tuesday: Purchased Chicken & Tarragon pie, served with smashed potatoes and roasted asparagus.

Wednesday: Easy Oven Baked Fish Nuggets and Crispy Sweet Potato Chips, served with creamy silverbeet.

Thursday: Slow Cooked Lamb Korma Curry, served with steamed jasmine rice.
