Every now and again I am reminded of the importance of having a spare meal or two in the freezer. Last weekend I left early in the morning, and did not arrive home until right on dinnertime. Thankfully I had a homemade lasagna in the freezer. I stuck the frozen dish in the oven, set the delayed cooking time and walked out the door. The lasagna defrosted slowly during the day, and I arrived home to the smell of a cooked meal. Bliss.
Our summer menu plan this week is full of great healthy recipes. Think of quick chicken skillet meals with zoodles, stuffed vegetarian mushrooms or a nourishing lentil bowl. And don't forget to stock your fridge with chocolate chia pudding pots for easy healthy snacks. Enjoy!

Winter Meal Plan
Sunday: Homemade Lasagna straight from the freezer.
Monday: Toad in the Hole, served with Brown Onion & Madeira Gravy and Maple Roasted Brussels Sprouts.
Tuesday: Jamie Oliver's Pot Roasted Meatloaf, served with a green salad.
Wednesday: Sweet Potato & Chorizo Soup, served with Artisan Bread in 5.
Thursday: Chicken & Lentil Slow Cooker Curry, served with steamed rice.
