I have tried quite a few of her recipes and they have all turned out great. I will be posting them here periodically.
Today's Cilantro rice is a very interesting one and when I watched her make it on the show, I wasn't sure I would like it. Cilantro is ground into a paste along with raw mango, cumin seeds and jaggery -- then mixed with cooked brown rice. It is almost like a salad with not much cooking involved except for the cooking the rice.After trying it out, I really enjoyed the combination of flavors -- the raw mango, jaggery and cumin seeds complement the cilantro really well. There is no oil in the recipe, but it has good fat in the form of walnuts. All in all if you are looking to eat healthy food, then this is a great recipe to start of with.

Ingredients: Brown Rice - 1cup Cilantro leaves - 1cup Green raw mango - ½cup, grated Green Chilies - 2 (adjust as per taste) Cumin seeds - 1tsp Jaggery - 2tsp (adjust as per taste)
Walnuts - 2tbsp, grated
Shallots - 2tbsp, finely chopped
Salt - to taste
Method:
- Cook brown rice according to package directions (usually 1:1¾, rice:water ratio). Set aside.
- Grind cilantro, green raw mango, chilies, cumin seeds, jaggery and salt into a paste.
- Add the cilantro paste, walnuts and shallots to rice. Mix well and serve!!
