Seems that so many of us are looking for ways to make our eating habits just a little healthier. And, that quest for healthiness includes our desserts. Yes, our sweets. This banana walnut bundt cake is

Now I'm not sure how 'healthy' this banana walnut bundt cake is, but I do know that there are some additional ingredients, chia seeds, ground flax, natural pineapple juice and walnuts, that add some positive nutritional value. Of course, since it's a banana cake, it's got some natural sweet from the bananas.

The key to eating desserts and sweets is to know when to stop eating them. And, not to be indulging day in and day out. Make desserts and sweets a privilege and special occasion, not a daily fix. And, that's a challenge for so many of us. Another way to look at eating desserts is to try to incorporate some nutritional ingredients like I did in this recipe. I could have added some unflavored protein powder, too. However I just might in the next go round.

Anyway, there's also a short cut with this cake. Yes, we're using a cake mix that helps make the baking go a little faster. I can say that this is one delicious cake! And, I'm not feeling quite as guilty having a nice thick slice!

Ingredients

  • Preheat oven to 350
  • 2 slightly ripe bananas, mashed
  • 1/3 cup oil, vegetable or canola
  • 1 Tbl. vanilla
  • 3 eggs
  • 1 box (15.25 oz.) cake mix, white or yellow
  • ¼ cup pineapple juice
  • ¼ cup chia seeds
  • ¼ cup ground flax seeds
  • 1 cup walnuts, chopped
  • ½ cup unsweetened coconut, optional
