Buona La Befana

Happy La Befana! Keep in Touch Wherever You Are..

Today for La Befana, planning a light menu..but one of my favorite desserts is a Tiramisu Panettone..especially since we have amassed enough panettone during the Christmas Holidays for a small village! It is an easy recipe, but delicious also, and no one will ever guess it was made from left over anything,.panettone..and what a great way to recycle food..too precious to waste

Cut the panettone into 1 inch slices.  In a  separate bowl mix a liquid of 1/4 cup rum to 1/8 cup water, brush on to each slice with a pastry brush. In another bowl mix 8 ounces mascarpone and 1/4 cup sugar, 1 tsp real vanilla. Blend till cream is smooth. Top each slice with this cream and dust with powdered cocoa, serve
