Happy Heart Day. {Indulge Yourself Vegan Peanut Butter Brownies}

Whether you are a lover or hater of days like today…. there is no better day to indulge yourself than by eating a big rich gooey brownie… topped with peanut butter nonetheless! I had never topped a brownie with peanut butter until I made these…. and let me just say, brownies without it, well… they just don’t stand a chance!

Vegan Peanut Butter Brownies

Ingredients:

1 1/2 cups All Purpose Flour
1 1/4 cup Sugar {I used sugar in the raw}
1/3 cup Cocoa Powder {make sure it’s Vegan… most are}
1 tsp Baking Powder
3/4 tsp Salt
3/4 cup Water
3/4 cup Vegetable Oil
1 1/2 tsp Vanilla
1/4 cup Creamy Peanut Butter
Get Baking.

  • Preheat oven to 350F.  Grease 10x10 baking dish {I use coconut oil when I bake, it creates a nice buttery flavor}
  • Combine dry ingredients: flour, sugar, cocoa powder, baking powder and salt. 
  • Add the water, oil and vanilla and mix until just combined.
  • Spread brownie batter into baking dish. 
  • Take the peanut butter and drop small spoonfuls {teaspoon size} on top of the brownie mixture.
  • Use a butter knife and gently stir around the peanut butter on top creating a swirl pattern.
  • Bake at 350 for 25 minutes.  Let cool completely before cutting into squares. Also these are fudge like brownies… for a more cake like brownie adjust your cooking time.

Enjoy with a cup of coconut milk. YUM.
