Grill Eggplant & Tomatoes Recipe

GRILL EGGPLANT & TOMATOES

INGREDIENTS

  • 2 small eggplants, cut into 1/2-inch slices
  • 2 tomatoes, cut into halves
  • 2 tbsps. olive oil
  • 2 tbsp. lime juice
  • Pepper to taste

TOPPING SAUCE

  • 1 cup parsley for topping
  • 1 lime juice
  • 2 tbsps. water

DIRECTIONS

1. Mix together olive oil, lime juice and pepper in mixing bowl

2. Brush eggplant and slices with this oil mixture.

3. Let stand for 5 minutes.

4. Grill eggplant and tomatoes in preheated grill over medium heat for 4-5 minutes per side until tendered.

5. Transfer cooked veggies in plate.

6. Meanwhile, blend topping sauce ingredients in food blender.

7. Top veggies with this sauce.

8. Serve and enjoy!
