Greek Chicken & Roasted Veggie Wraps

Roasted Chicken & Veggies
- 1 chicken breast (7 oz), chopped into 1 inch pieces
- 1 small zucchini, cut into 1 inch pieces
- 1 bell pepper, cut into 1 inch pieces
- 1/2 red onion, cut into 1 inch pieces
- 1 tablespoon olive oil
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1 lemon sliced
Other
- 2 tablespoons feta cheese, crumbled
- 2 large flour tortillas or wraps
Instructions
Roasted Chicken & Veggies
- Heat oven to 425°F.
- In a large bowl, toss together the chicken, zucchini, bell pepper, red onion, olive oil, oregano, basil, garlic powder, onion powder and salt.
- Spread out on a baking sheet, tucking lemon slices underneath.
- Bake for 15 minutes.
- Allow to cool slightly before dividing between two 2 cup storage containers. Sprinkle with feta cheese.
Storage:
- Store in the fridge for up to 4 days.
To Serve:
- Heat in the microwave until heated through.
- Spoon into tortilla or wrap, and enjoy.
