Gooseberry & Elderflower Martini

By Alip @alisonpikeGD

One of the gardens I work in has the most heavily cropping gooseberry I have ever come across and unfortunately I have been unable to find out which one it is.  I do however have the good fortune of being given some of the fruits!

I do love gooseberries and as I kid I would find a comfortable spot by a gooseberry bush and start eating.  When it comes to recipes using gooseberries I seem to have run out of new interesting ones until I came across the idea of using them in cocktails.

So here we have the Gooseberry & Elderflower Martini, it has been a big success!

Gooseberry & Elderflower Martini

Gooseberry & Elderflower Martini

50ml gin
20ml elderflower cordial
6 ripe gooseberries
Possibly a dash of lemon juice, its really down to personal taste.

Put all the ingredients into your cocktail shaker with ice, muddle it well to make sure all the gooseberries get squashed and everything in thoroughly mixed.  Shake. Strain into a chilled martini glass.  Enjoy, this is a delicious cocktail and great in the sunshine we are finally having!
