Salsa. Such a divine addition to any dish! And, this golden beet salsa, or side dish, has the allure of gorgeous healthy golden nugget beets, hints of curiously addictive spices like cumin and corinander, subtle sparks of heat, and the surprise of sweetness!

Whether you're eating golden or deep purple beets, get ready for super nutrition. The benefits of beets abound. They're full of vitamin C, vitamin A, beta-carotene, lycopene, flavonoids, and zeaxanthin. Plus, they're loaded with much needed antioxidants. And, we all need more antioxidants in our lives!

What are Golden Beets

Golden beets are beets. They're just this amazing gorgeous golden hue. Like all orange and yellow vegetables, they're full of vitamins. You could certainly make this recipe with deep purple beets, but sometimes, I like to swap out colors with certain foods. For instance, I think this golden beet salsa will look gorgeous with grilled shrimp!

How to Cook Beets for Salad

How are you going to cook your beets? Well, my three favorite ways of cooking beets are boiling, steaming and roasting. Steaming beets is the best way to cook to retain more of the healthiness of them. According to studies, using high heat diminishes the beets' phytonutrients. For larger beets, slice them in halves or quarters. Steaming is really easy. Fill the bottom of your steamer with about 2 to 3 inches of water. Bring water to a boil. Add the beets. Then cover and let them steam about 15 minutes.

And roasting in the oven for 15 to 20 minutes gets the skins soft enough peel off more easily. Just cut them up. Put on a parchment paper lined cookie sheet. Roast in a 400 degree oven. Let the cool then remove the skins.

How to Eat Raw Beets

If you want to know how to eat raw beets, well, then, you're going to have to get the skin off. And, you'll need a potato peeler for that. Or you can use a sharp paring knife. Remove the skin then you can eat them raw. Try grating them in salads. Or do a small dice and add to salads.

Recipes with Beets

Now what inspired me to create this salsa? Well, I had a fresh bunch of organic golden beets, and I wanted to do something different with them. So I started flipping through the pages of one of my favorite, and very few, cookbooks, and looking at the pictures. Aahhhhhaaaa! Inspiration instantly! Just looking at stunning food photos ignites ideas for me. I don't even have to see a recipe. I can imagine it in my mind. The way I want to do it.
