A decadent, divine self-saucing chocolate pudding that is gluten-free and the perfect cold day treat. Of course given it’s ingredients it’s a sometime food, but the blueberries add a little something good:)
Pudding
- 1 cup self-raising gluten-free flour (or 1 cup of gluten-free flour and 1-1/2 teaspoons of gluten-free baking powder)
- 3/4 cup of sugar
- 1/2 cup cocoa
- 1/2 cup milk
- 1 teaspoon vanilla
- 30g melted butter
- 1 cup of blueberries
Sauce:
- 2 tablespoon cocoa
- 3/4 cup brown sugar
- 1 3/4 cups of boiling water
Combine the flour, sugar, coca, milk, vanilla and melted butter in a bowl and mix gently. Transfer to an oven dish with a lid. Mix the cocoa and brown sugar, then sift directly over the pudding. Using a metal spoon, pour the boiling water over the spoon onto the pudding (this helps it spread evenly and not disturb the pudding underneath).
Bake in a medium oven (I use 175 degrees) for 30-40 minutes. It’s ready when you can smell delicious chocolate wafting from the oven, and when you open the oven door to peer in the chocolate sauce is bubbling up nicely around the edges.
Serve with yoghurt, ice-cream, whipped cream or custard. You choose!
