Gluten Free Menu Plan: September 14-18, 2015

Just  one week ago it was 85 degrees, humid, and Labor Day. This week, the humidity is still here but we got a taste of fall this weekend as the temperature dipped into the 50’s and the rain came and stayed all weekend. Usually, I’m dead set against the rain, but after enduring 2 weeks of 80+ degree weather, the cool respite was not only needed but welcome. However, my body continues to ache, throb, and scream bloody murder with all the moisture in the air. Oh the joys of this fibro life. But before I ramble on for too long, get into this week’s menu plan. The forecast says we will rise back into the 80’s this week so I thought a feature of summer and fall fare will help ease the transition and allow us all to hold on to the glory days of summer for as long as possible. Have an awesome week :)
