Well we made it! I told you the end of June would sneak up on us and here we are. Summer is in full swing and with the Fourth of July holiday falling midweek, I thought this week is as good a time as any for me to take a “blogging break.” Not that I don’t love all of you but there are many projects and “fish” in my fryer that I need all of my energy to focus on. The move back home has been a whirlwind and a self-induced internet hiatus is in order. I met an A+mazing co-blogger via Twitter and she has been kind enough to provide a guest post in my absence this week. Look out for that on Tuesday.
As for this week’s gluten free menu: easy, breezy, picnic and repeat are words that immediately came to my mind so I developed the menu accordingly. My motto is: Grill smarter not harder. Batch grill your meat (if you eat meat) days ahead and pair it with one or two of these amazing sides and salads during the week. Quick and easy!
For all my vegan friends out there, these meals are just as awesome served alone with grilled tofu or even more veggies! Whatever you eat, please don’t spend all your time in the kitchen; get out and enjoy the sun!
